I germogli sono ben diffusi
nella dieta di molti paesi del mondo. L'Italia ha visto solo di recente
l'introduzione dei germogli nell'alimentazione, parte grazie alle colture
alimentari alternative (biologico, diete vegetariane ecc) e parte grazie
ad aziende (tra le quali Hortus è stata in prima linea) che hanno
presentato ed introdotto i germogli come sano e gustoso contorno alla
cucina mediterranea.
I germogli sono il frutto della prima mutazione dal seme alla pianta, in molti casi sono commestibili e anzi, mantengono tutte le proprietà del seme che nel processo di crescita vengono in parte perse. La coltivazione dei germogli può essere fatta anche privatamente, con acqua e poco altro.
